Here’s another great recipe from Jessica. Cauliflower is a great substitute for potatoes while eating Paleo.
This recipe is from Sarah Fragoso’s Everyday Paleo Family Cookbook
- 1 head of cauliflower
- 6 hard-boiled eggs
- 1/2 a small red onion finely chopped
- 3 celery stalks, finely chopped
- 3/4 cup Olive Oil mayonnaise (home-made if possible)
- 1 cup diced dill pickles
- 1 T dried dill
- 1 t yellow mustard
- black pepper to taste
Chop your cauliflower into florets and steam for 8-10 minutes or until tender but not mushy. While your cauliflower is steaming add the diced egg, onion, celery, and pickles to a large mixing bowl and set aside.
Once your cauliflower has steamed, remove your cauliflower from your steamer and let it cool in the fridge for 10 minutes or so. Remove your cauliflower from the fridge and chop into small pieces. Add your cauliflower in to the bowl with the other ingredients. Add remaining ingredient and mix well.
